Asparagus and Feta Salad

Asparagus and Feta Salad. A warm and light salad, great with white meat including fish or chicken.

  • Yields: 4 Servings

Ingredients

250g of asparagus spears

2 T of olive oil

1 tsp of crushed garlic

1tsp of sea salt

1/2 tsp of black pepper

1 T of lemon juice

100g of feta cheese

Directions

1Preheat oven to 200°C.

2Place the asparagus spears in a mixing bowl and drizzle with olive oil.

3Toss to coat the asparagus and then add the garlic, salt and pepper.

4Place the asparagus on a baking sheet, spreading the spears evenly.

5Bake in the oven until just tender for timer length=12]12 Minutes[/timer] .

6Remove from the oven.

7Sprinkle with lemon juice and add the feta cheese.

8Place back in the oven for another 2 Minutes.

9Remove and enjoy while hot.
