Aubergine And Pomegranate Salad with Tzatziki Dressing.

Ingredients

Salad

1 large aubergine

1 T of olive oil

1/2 pomegranate

Dressing

1 cup of Double Cream Yoghurt

2 T of diced cucumber, peeled

1 tsp of lemon juice

1/2 tsp of salt

Directions

Salad

1Heat a frying pan to medium heat.

2Cut the large aubergine into circles.

3Add olive oil and fry until golden brown.

4Add the pomegranate seeds on top of aubergine.

Dressing

1Combine yoghurt, cucumber, lemon juice and salt.

2Sprinkle over aubergine and pomegranates.

3Add a few extra pomegranate seeds on top.

4Enjoy!
