Baby Marrow Fritters

Baby Marrow Fritters. A great side dish for any main meal or delicious as a snack on its own.

  • Yields: 6 fritters

Ingredients

3 medium baby marrows, grated

2 large eggs

1 cup of almond flour

1 tsp of baking powder

1 tsp of psyllium husk

Pinch of salt an pepper

Pinch of thyme

1 T olive oil

Directions

1Grate the baby marrow add the eggs, almond flour, baking powder, psyllium husk, salt, pepper and thyme.

2Heat a frying pan to medium-high heat.

3Add the olive oil.

4Scoop up heaped tablespoons of the batter and fry until the fritter is golden on both sides.

5Remove from the pan.

6Enjoy!
