Baked Banting Cheesecake

Baked Banting Cheesecake. Best for after a nice Sunday lunch.

Ingredients

Cheesecake Crust:

2 Eggs

1 cup Almond flour

1/4 cup Xylitol

1tsp baking powder

1 T butter (greasing)

Cheesecake filling

500g of full cream cheese, softened (Philadelphia)

1/2 cup of cream

1/2 cup Xylitol

1 tsp of Vanilla extract

3 eggs

Cheesecake topping

Blueberry

1 T Salted butter

1 tsp Xylitol,

1 cup Blueberries

1 T Psyllium husk

Strawberry

1 T Salted butter

1 T Xylitol,

1 cup Blueberries

1 T Psyllium husk

Directions

Crust

1Preheat oven to 180° C degrees and grease spring form pan with butter.

2Beat the eggs until light and frothy.

3In a large bowl combine the eggs, flour, Xylitol and baking powder until mixed well.

4Pour into the greased spring form pan, spread evenly and bake in the oven for 15 Minutes or until lightly browned.

5Allow to cool for 5 Minutes .

Filling

1Add the cream cheese, Xylitol, vanilla extract in a bowl and mix in a mixer until fully combined.

2Add the eggs and continue mixing on medium just until the mixture is smooth.

3Pour the filling over the cooled down crust, spread evenly and bake in the oven on 180°C for 30 Minutes or until the center is set.

4Cool for at least 30 Minutes and add topping.

Topping

1Add butter, Xylitol and berries to a sauce pan.

2Simmer the berries (strawberry/blueberry) over medium heat for a few minutes until butter is melted.

3Then add the psyllium husks to thicken.

4Pour this mixture over the cheesecake before it sets.
