Baked Eggplant Dish

Baked Eggplant Dish. Delicious with meat or fish.

  • Yields: 3 Servinggs


4-6 small to medium Eggplant

3 T Olive Oil

1/2 cup of Sliced Mushrooms

4 Romanita Tomatoes

4 T Red Onion

4 T Yellow Pepper

4 T Red Pepper

1 tsp of Salt

1 tsp of Black Pepper

2 cups of shredded Matured Cheddar


1Add 1 tablespoon of the Olive oil in a pot.

2In the pot fry up the onion, mushrooms and pepper.

3Preheat oven to 150° C.

4Cut the eggplant in round circles and place evenly on a baking sheet.

5Add 2 tablespoons of olive oil and salt and pepper over the eggplant.

6Preheat oven to 180° C.

7Remove eggplant and place in a baking dish.

8Add the onion, mushrooms, pepper and tomatoes to the fried eggplant.

9Sprinkle over the cheddar cheese.

10Grill in the oven for 10 Minutes.

11Serve hot.
