1Preheat oven 180°C.
1Heat a frying pan and add 1 teaspoon of olive oil and garlic.
2Fry the onions.
3Cook the spinach and drain properly.
4Add the spinach, mascarpone cheese, egg, mozzarella, cheddar, salt and pepper to the onions. Mix thoroughly.
1Add two teaspoons of the olive oil to a baking dish.
2Add the can of diced tomatoes and herbs and spread out evenly.
1Cut the large courgettes into halves. Take a vegetable peeler and peel slices length-wise.
2Place 4-5 courgette strips on top of each other. Take the filling and add to one side and roll the courgette cannelloni length-wise.
3Place each courgette cannelloni on top of the tomatoes.
4Sprinkle with Parmesan and bake for 30 Minutes.
5Remove and enjoy!
