Banting Flapjack Stack

Banting Flapjack Stack. Very delicious, easy and great for breakfast!

Ingredients

Flapjacks

1/4 cup of coconut flour

1/4 cup of almond flour

1 tsp of baking powder

1/4 tsp of sea salt

1/4 cup of olive oil

1.5 tsp of xylitol

3 eggs

1/2 cup of coconut milk

1 tsp of vanilla extract

1 T of olive oil for cooking

Filling

8-15 bacon strips

2 T of honey

8 T of creme fraiche

Directions

Flapjacks

1Heat a frying pan to medium to high heat and olive oil.

2Mix all of the dry ingredients together (coconut flour, almond flour, baking powder, salt and xylitol).

3Mix all of the wet ingredients together (olive oil, eggs, coconut milk and vanilla extract).

4Add the wet ingredients to the dry ingredients and mix thoroughly until a smooth mixture.

5Pour spoons full of the mixture in the pan and cook until there are bubbles that start to form on the flapjack, flip over and cook the other side.

6Remove from the heat and set aside.

Filling

1Preheat oven to 180°C.

2Place the bacon strips flat on a flat baking sheet and bake in the oven for 12 Minutes until bacon is crispy.

3Remove from the oven.

Compilation of flapjack stack

1Place one of the flapjacks at the bottom.

2Drizzle with some of the honey,

3Spread some creme fraiche on the flapjack

4Add about two strips of bacon.

5Repeat the process.

6Enjoy!
