Banting Flapjacks. This delicious dish can be your breakfast, lunch or even dinner!
- Prep: 10 mins
- Cook: 20 mins
- Yields: 8 Medium flapjacks.

Directions
1Mix all of the dry ingredients together (coconut flour, almond flour, baking powder, salt and xylitol).
2Add the wet ingredients to the dry ingredients (olive oil, eggs, coconut milk and vanilla extract).
3Mix until a smooth consistency.
4Heat a frying pan over medium to high heat.
5Add the oil for frying.
6Add the smooth flapjack mixture tablespoons full to the heated pan.
7Flip the flapjack after about 1Minutes and fry until golden brown on both sides.
8Remove from heat and add topping of choice.
Blueberry topping
1Heat the water in a saucepan.
2Add the Xylitol, Psyllium husk and blueberries.
3Stir continuously until desired texture for about 3 Minutes .
I have decided to change this recipe entirely due to the different coconut flours and oils out there that can influence the outcome of these delicious flapjacks! Hope you enjoy!

Thank you so much for your feedback. Yes, unfortunately with the different types of coconut flour + coconut oils you get out there the recipe will not work if you have certain brands of the product.
For this reason, I have decided to amend the recipe to take out or reduce these ingredients to make sure that the flapjacks work for everyone. Please see below:
Ingredients (makes 8-10 medium):
1/4 cup of coconut flour
1/4 cup of almond flour
1 tsp of baking powder
1/4 tsp of sea salt
1/4 cup of olive oil
1.5 tsp of xylitol
3 eggs
1/2 cup of coconut milk
1 tsp of vanilla extract
1 T of olive oil for cooking
Method (makes 8-10 medium):
1. Heat a frying pan to medium to high heat and olive oil.
2. Mix all of the dry ingredients together (coconut flour, almond flour, baking powder, salt and xylitol).
3. Mix all of the wet ingredients together (olive oil, eggs, coconut milk and vanilla extract).
4. Add the wet ingredients to the dry ingredients and mix thoroughly until a smooth mixture.
5. Pour spoons full of the mixture in the pan and cook until there are bubbles that start to form on the flapjack, flip over and cook the other side.

These pancakes did not work. Followed the recipe exactly adding extra milk as suggested. They were quite unsuccessful.

It really depends on the brand of coconut flour and coconut oil being used in the recipe. Sometimes they are more dry than other brands.
I would suggest that you either use more milk (to get a smooth consistency) or substitute the coconut oil for olive oil.

My mixture came out extremely dry. There is roughly 1/2 a cup of moisture to 1 cup of coconut flour. It’s just not right!! Didn’t work at all.

Recipe worked perfect for me. Didnt have coconut milk so used Almond milk instead – but followed it to the tee and it was perfect!
