1Preheat oven to 180°C.
2Slice the brinjals into rings.
3Add the brinjals to a flat baking sheet, sprinkle with olive oil and salt.
4Bake in the oven for 12 Minutes.
5Heat a frying pan to medium to high heat.
6Add the butter, onions, mushrooms and peppers and fry until golden brown.
7Set a aside.
8Use a baking dish and place a layer of the brinjals at the bottom.
9Add the onion, mushrooms and pepper mixture on top.
10Place dollops of cream cheese on top of the mixture.
12Sprinkle with cheese and add to the oven to bake at 180°C.
13Bake the brinjals for another 10 Minutes.
