1Heat frying pan to medium to high heat.
2Sprinkle hake with salt and pepper to taste.
3Add olive oil to pan.
4Fry hake in pan skin down.
5Cook for about 2 Minutes to 3 Minutes until the skin begins to crisp.
6Add about 10g of butter and cook for another 3 Minutes to 4 Minutes until cooked through.
7Remove fish from pan.
8Add the rest of the butter, herbs and squeeze the lemon juice into the butter.
9Cook for about 1 Minutes - 2 Minutes.
10Pour butter sauce over hake.
