1Preheat the oven to 180 °C.
2Place the cauliflower florets into a steamer or pot and cook for 15 Minutes until tender.
3Remove from the steamer or pot.
4Place the cauliflower florets on a baking tray that has been sprayed with Spray and Cook and drizzle the olive oil over.
5Place in the oven for 10 Minutes.
6Remove from the oven and place in a bowl. Mash the cauliflower florets with a potato masher until well mashed.
7Add the eggs, grated cheese and chopped onions, mushrooms and pepper.
8Add the Spice for rice, Italian herbs and almond flour to the mix and mix well.
9Using hands, shape cauliflower cakes into 1,5 cm patties.
10Place patties back on the baking tray and bake for about 12 Minutes.
11Serve while hot, plain or with Creme Fraiche.
