1Cook the cauliflower until tender, but not mushy.
2Place in blender and rice the cauliflower.
3Heat a frying pan to medium to high heat.
4Add the snippered bacon and fry until brown.
5Add the butter, onions and mushrooms.
6Cook until soft and tender.
7Add the cauliflower rice and cheese.
8Simmer for a few minutes.
9Sprinkle with salt and pepper to taste.
