Chicken And Zucchini Spaghetti with White Sauce

Chicken And Zucchini Spaghetti with White Sauce. Another great weekday meal, quick, easy and very wholesome!

  • Yields: 2-4 Servings



2 chicken breasts, finely diced

1 tsp of chicken spice

1 tsp of mixed herbs

1 tsp of lemon juice

1/2 cup of mushrooms

1/4 cup of peppers

1/2 onion chopped

1 T of olive oil


350g of zucchini, spiraled


1/2 cup of white wine

1 large ring of black pepper feta cheese

3 T of full fat cottage cheese (smooth)

1/2 tsp of sea salt

Pinch of blackpepper

1 cup of shredded white cheddar cheese



1Heat a frying pan to medium to high heat.

2Sprinkle the chicken spice, mixed hers and lemon juice over the diced chicken.

3Add the olive oil, diced chicken mixture, mushrooms, peppers and onions to the pan and fry until the chicken is cooked through (keep lid on the pan for this).

4The cooking for the chicken takes approximately 20 Minutes.


1Cook or steam the zucchini spaghetti for about 4 Minutes until soft.

2Remove and drain all of the excess water.

White sauce

1Heat a saucepan to medium to high heat.

2Add the wine, feta cheese, cottage cheese, salt and pepper.

3Simmer for about 3.5 Minutes until the feta cheese and cottage cheese have melted completely.

4Remove from heat and use as white sauce for your dish.

5You can add more or less salt and pepper to taste.


1First add the zucchini spaghetti to the bowl and then the chicken mixture. Repeat this one more time and then add the white sauce on top with cheese.
