Chocolate And Macadamia Muffins

Chocolate And Macadamia Muffins. Great dessert recipe or can even be good for a snack for lunch.

  • Yields: 12 muffins


2 eggs

2 T of melted butter

70 ml of olive oil

2 T of chocolate macadamia butter (or another 2 T of melted butter)

50 ml of milk

1 tsp vanilla essence

2 T of Xylitol

1 tsp of baking powder

2 cups of almond flour

30g of chopped macadamia nuts

1 T of raw cacao

4 blocks of 85% dark chocolate

Dash of salt


1Preheat oven to 180°C. Place muffin cups in muffin pans.

2In a medium mixing bowl combine the eggs, oil, butter, milk and vanille essence.

3In a separate mixing bowl combine the almond flour, baking powder, cacao, macadamia nuts and salt.

4Chop the chocolate into smaller pieces and add to the mix.

5Add the dry ingredients to the wet ingredients and mix thoroughly until everything is well combined.

6Use a spoon to divide the batter evenly among 12 muffin cups.

7Bake for 20 Minutes. Toothpick should come out clean and they should be nice and firm.

8Cool the muffins down and enjoy with butter, cream or as is.
