Fried Hallmoumi And Spinach Salad. A great salad for those summer days when you are looking for something fresh, light and tasty.

Directions
1In a bowl combine the spinach, cucumber and gherkins.
2Grate the orange to create orange zest and cut the orange in half using only about 2 T of orange juice as dressing.
3Add the zest and juice and also drizzle over the olive oil.
4Heat a frying pan to high heat and dry fry the halloumi.
5Remove from the pan.
6Add some olive oil to the pan and fry the tomatoes.
7Add the tomatoes and halloumi to the salad.
8Toss before serving with protein or fat of choice.
