Fritatta Breakfast

Fritatta Breakfast. A very filling breakfast full of goodness!

  • Yields: 6 servings


10 eggs

2 cups of shredded cheddar

1 cup of shredded mozzarella

125g of bacon bits

1/2 cup of chopped bell peppers

1/2 cup of chopped onion

5-8 romanita tomatoes, chopped

1 cup of chopped zucchini

1 tsp of salt

1 tsp of black pepper

1 tsp of thyme

1 T of butter

1 tsp of olive oil


1Heat a frying pan to medium to high heat.

2Add the olive oil.

3Add the bacon, bell pepper, onion,tomatoes and zucchini and fry until golden brown.

4In a separate bowl add the eggs, salt, pepper and thyme and whisk until smooth.

5Add butter to the pan and then the egg mixture.

6Add the cheese on top.

7Place the lid on top of the pan.

8Do not stir any of the ingredients.

9Cook for about 30 Minutes or until egg is cooked through in the middle.

10Remove from heat and let it cool down.

11Serve in slices.
