Low Carb Carrot Cake

Low Carb Carrot Cake. A very rich and decadent dessert.

  • Yields: 12-14 servings

Ingredients

Cake

4 large eggs

125ml melted butter

125ml olive oil

2 T of Xylitol

10ml vanilla extract

1/2 cup of pecan nuts, chopped

1/2 cup of shredded coconut

3 cups of grated carrots

11/2 cups of almond flour

1 tsp of cinnamon

1/2 tsp of nutmeg

10ml baking powder

Topping

1 tub of cream cheese, softened

2 T of Xylitol

Extra pecans for decorating

Directions

Cake

1Preheat oven to 180°C. Spread some butter on bread pan.

2Mix eggs, butter, oil, Xylitol, vanilla extract in bowl.

3Add pecan nuts, coconut and carrots and mix thoroughly.

4Add almond flour, cinnamon, nutmeg and baking powder and mix.

5Pour mixture into bread pan and bake for approximately 40 Minutes.

6Test cake by placing knife in the middle, if it comes out clean cake is cooked through.

7Remove and let the cake cool down.

Topping

1Add cream cheese and Xylitol in a mixing bowl.

2Beat with electric mixture until soft and smooth.

3Spread topping over cake and sprinkle with pecan nuts.

4Enjoy!

Yes, banting allows for up to 100-200g of carbohydrates per day. It is not a no-carb diet but rather a low-carb diet.

You will not be able to function without any carbohydrates, you just need to limit the intake of the carbs.

One in the oven at the moment. And then I saw that there are more carbs per serve that fat… almost banting carrot cake then…
