1Chop the mozzarella cheese into cubes of 0.5cmx0.5cm.
2Roughly chop the basil leaves.
3Make an incision in the chicken breast and place the mozzarella and basil leaves inside.
4Take a toothpick or sosatie stick (cut down) and secure the chicken breast.
5Sprinkle with salt and chicken spice.
6Preheat a frying pan to medium to high heat.
7Add the olive oil and place the breasts carefully inside the pan.
8Fry for 4 Minutes on each side (sides and underneath breast).
9While frying, place the lid on to make sure it cooks perfectly.
10Remove from the heat after about 12 Minutes.
11Leave in pan for about 5 Minutes to cool.
12Remove from pan and take out the toothpicks/sosatie sticks (if the picks/sticks come out easily, chicken is cooked).
