Pumpkin Bread

Pumpkin Bread. Delicious with soup or as sandwich bread!

  • Yields: 10-12 slices


3/4 cup butter, melted

4 large eggs

1/4 cup milk

1/3 cup of olive oil

2 cups of cooked pumpkin, mashed

2 cups almond flour

1/3 cup coconut flour

4 tsp baking powder

1/4 cup of Xylitol

pinch of salt

1 tsp ground cinnamon

1/4 tsp ground nutmeg

Spray and Cook


1Preheat oven to 180°C.

2Combine the melted butter, eggs, milk, oil and pumpkin in a blender and blend until smooth.

3Combine the almond flour, coconut flour, Xylitol, baking powder, salt, and spices in a medium bowl and stir well.

4Pour the blender ingredients into the dry ingredients and stir until well combined and moisture is absorbed.

5Spray loaf pan with Spray and Cook and spoon the batter into a 12 x 4 loaf pan.

6Bake the bread at 180°C in the center of your oven for 50 Minutes (or until a knife inserted in the center comes out clean).

7Turn off the oven and leave the bread in there for an additional 15 Minutes.
