Rainbow Cauliflower Rice. A very easy and delicious weekday meal. The cauliflower rice is very filling and also very tasty combined with all of the other ingredients.
1Cook or steam the cauliflower florets until tender 7.5 Minutes.
2Place in blender and pulsate until rice is formed.
1Cut the bacon and chorizo into smaller pieces.
2Heat a frying pan and add the olive oil, bacon, chorizo sausage, bell peppers, onions, mushrooms and garlic.
3Fry until golden brown.
4Sprinkle all of the ingredients with salt, pepper, thyme and coriander.
5Cut the spinach and cook or steam for about 6 Minutes.
6Add the spinach and cauliflower rice to the frying pan and serve.
