Roasted Peppers, Courgette and Bacon Salad

Roasted Peppers, Courgette and Bacon Salad. A decadent salad, rich and tasty!

  • Yields: 4 servings


1 yellow bell pepper

100g of small courgettes

125g of streaky bacon, cut into pieces

1 T of olive oil

15-20 small romanita tomatoes

3 cups of lettuce

4 small gherkins

1/2 cucumber, sliced

1/4 tsp salt

1/2 tsp of pepper


1Preheat oven to 180°C.

2Heat a frying pan to medium to high heat.

3Cut the peppers length-wise into strips.

4Add 1 tsp of olive oil to pan and roast the peppers by placing them flat on the pan.

5Remove from heat and add the bacon.

6Fry bacon until crispy.

7Remove and set aside.

8Cut the courgettes into quarters (length-wise) and place on flat baking sheet.

9Drizzle with oil, sprinkle with salt and pepper and roast for 12 Minutes until soft.

10Cut the lettuce into smaller pieces.

11Cut the tomatoes into quarters.

12Cut the gherkins and cucumber into smaller pieces.

13Combine all of the ingredients.

14Add the peppers on top.
