Roasted Pumpkin And Swiss Chard Salad. A very delicious winter salad as you can serve it with the pumpkin still being hot.
1Preheat oven to 180°C.
2Cut the pumpkin into cubes.
3Cook the pumpkin until tender, but not soft.
4Place in an oven proof dish, drizzle with olive oil and roast for about 15 Minutes.
5Cut the swiss chard, cucumber, tomatoes and feta cheese into smaller pieces.
6Add to a salad bowl.
7Heat a frying pan to medium to high heat.
8Add the pumpkin seeds and roast until you start hearing them pop like popcorn. Remove from heat.
9Remove pumpkin from the oven and add to the other ingredients.
10Sprinkle salad with roasted pumpkin seeds.
