Roasted Pumpkin with Parmesan and Pumpkin Seeds. Best side dish for chicken or beef.

Directions
Butternut
1Preheat the oven to 180°C.
2Cut the pumpkin cubes into smaller pieces.
3Add the salt, pepper, cayenne pepper and coconut oil to the pumpkin. Make sure all of the pumpkin is coated with oil.
4Coat the baking sheet with Spray and Cook. Spread the pumpkin evenly on the baking sheet.
5Bake in the oven for approximately 20 Minutes.
6Remove from oven to cool.
7Add to a baking dish.
Pumpkin Seeds
1Take a medium skillet and toast the pumpkin seeds over medium heat for about 5 Minutes.
Assembling dish
1Place the pumpkin and pumpkin seeds in a baking dish.
2Sprinkle over the shredded Parmesan cheese.
3Enjoy while hot.
