Stuffed Peppers

Stuffed Peppers. A great alternative for a fast weekday dinner or lunch.

  • Yields: 2-3 servings

Ingredients

4 large peppers (green, yellow or red)

250g of full fat mince

150g of cauliflower

1 T of olive oil

1/2 onion, chopped

1 cup of mushrooms, chopped

1/2 tsp of salt

1 tsp of black pepper

1 tsp of steak and chops spice

1 tsp of thyme

1 1/2 cup of shredded mozzarella cheese

Directions

1Preheat oven to 180° C.

2Heat a frying pan to medium to high heat.

3Add the olive oil, onions, mushrooms, mince, salt, pepper, steak and chops spice and thyme.

4Cook the mince until cooked through.

5Remove from the heat and set aside.

6Cook the cauliflower until tender, but not soft.

7Remove and drain properly.

8Add to a blender and pulse until you have a rice consistency.

9Set aside.

10Take the whole pepper and cut off the top. Remove the inside and the pits.

11Mix the mince and cauliflower rice.

12Place the mixture inside of each pepper.

13Sprinkle with cheese and add to a baking sheet or baking dish.

14Grill in the oven for 20 Minutes.

15Remove from heat and enjoy!
