Stuffed Zucchini

Stuffed zucchini. Another great weekday or weekend meal. It looks great on your plate and taste divine!

Ingredients

4 large zucchini

125g of steak

1 cup of chopped bell pepper

1 cup of chopped mushrooms

1/2 cup of chopped onion

1/2 cup of peppadews

1 tsp of crushed garlic

1 cup of chopped spinach

1 cup of shredded red cabbage

1/2 ring of feta cheese

11/2 cup of grated cheddar cheese

1 T of salt

2 T olive oil

1 T of black pepper

Directions

1Heat a frying pan to medium to high heat.

2Add the 1 T of olive oil, steak, peppers, mushrooms, onions, peppadews and garlic.

3Fry until steak is cooked through.

4Add the spinach and red cabbage and simmer until the leaves are soft.

5Remove from heat and set aside.

6Preheat the oven to 180°C.

7Cut the zucchini in half take out all of the seeds with a spoon and add the fried mixture on top of each zucchini.

8Sprinkle with feta cheese, cheddar cheese salt and pepper and drizzle over the remainder of the olive oil.

9Place the stuffed zucchini on top of a flat baking sheet.

10Place inside the oven and bake for about 20 Minutes until the zucchini is soft.

11Remove from the oven and enjoy!
