1Preheat oven to 180°C.
2Cut the tomatoes and onion lengthwise.
3Chop avocado in smaller cubes.
4Cut the sweet potato lengthwise and place on a baking sheet.
5Drizzle with olive oil and sprinkle with salt and pepper.
7Remove from oven and divide the sweet potato into two piles.
8Sprinkle with cheddar cheese and place back in the oven for 5 Minutes.
9Remove from oven and take first pile and place on plate and then second pile into another plate.
10Add the tomato, onion, avocado, origanum and sour cream to each plate.
