2As soon as done, mash the sweet potato as finely as possible with fork or masher.
3Add the egg, butter, half the Parmesan and a good pinch of salt and pepper to the mashed sweet potato and fold all the ingredients in.
4Then transfer the mixture to a piping bag with a star-shaped nozzle attached.
5 Starting from the middle, pipe the mixture into circles about three inches wide on a tray lined with baking paper.
6Then add to rings of potato around the edges of the circles, forming a hollow inside.
7Cut the cheese and bacon into cubes and use them to fill the nests.
8To finish, sprinkle the rest of the Parmesan over the nests and then bake them for 20 Minutes at 190°C.
