Directions
1Preheat oven to 180°C.
2Cut the aubergines lengthwise. Make 4 slits in each aubergine.
3Cut the tomatoes into slices and then halves.
4Cut the mozzarella into thin slices.
5Add the aubergines to a baking dish.
6Sprinkle aubergines with olive oil and place in the oven.
7Bake for about 15 Minutes.
8Remove from the oven and add the tomato, mozzarella, salt and basil.
9Place back in the oven for another 10 Minutes.
10Remove and enjoy!
