1Preheat oven to 180° C.
2Cut the zucchini into circles.
3Cover the zucchini with 1 T of olive oil and place on a flat baking sheet.
4Place in the oven for 8 Minutes.
5Heat a frying pan to medium to high heat and add 1 T of olive oil, chopped onions, peppers and mushrooms to the pan.
6Fry until the onion and peppers are golden brown.
7Remove from the pan and mix with the zucchini.
8In a sauce pan add the creme fraiche, coconut cream, feta cheese and Italian herbs.
9Simmer for about 3 Minutes until combined.
10Place the zucchini mix into a baking dish, pour over the creamy sauce and add the cheddar cheese.
11Place in the oven for 5 Minutes until cheese is melted.
12Serve with meat, fish or chicken.
