1Heat a frying pan to medium to high heat.
2Add the butter.
3Add the chopped onions, peppers and mushrooms.
4Slice the chicken in strips and add to the pan.
5Sprinkle with thyme, pepper, salt and chicken spice.
7Add the mascarpone cheese and feta cheese.
8Let the cheese melt and remove from the heat when sauce has formed.
9Add on top of cauliflower rice.
1Heat a pot to medium to high heat.
2Add water and cauliflower.
4Drain off the water and add the cauliflower to a blender.
5Pulse until you get a rice consistency.
6Remove from blender and add to plate.
7Add chicken and enjoy!
