Roasted Pumpkin, Basil And Feta Quiche. A delicious meal for the whole family. Great for Sunday teas and a chat with your girlfriends.
1Cook the pumpkin, until tender but not soft for about 8 Minutes.
2In a frying pan add the olive oil, mushrooms, onions, peppers an fry until golden brown.
3Remove from pan.
4Preheat oven to 180°C.
5Take a flat baking sheet and spray with spray and cook. Add the pumpkin and roast for about 12 Minutes.
6Remove from the oven.
7Break open all of the eggs into a bowl, add salt, pepper, chopped basil leaves.
8Whisk until the eggs are mixed thoroughly.
9Add the pumpkin, feta (crumbled), mushrooms, onions, peppers and cheddar.
10Place in a shallow baking dish and bake for about 25 Minutes - 35 Minutes until cooked thoroughly (you can test by sliding a butter knife in the middle, if there is any liquid egg coming out, bake a little longer).
11Serve the quiche with a mixed leave salad and enjoy!
