1Preheat oven to 180°C.
2Cut the brinjal length-wise.
3Place the brinjals on a baking sheet and drizzle with olive oil and sprinkle with salt.
5Cut the onions, peppers, mushrooms and bacon into small pieces.
6Add to a frying pan and fry until ingredients are golden brown.
7Add the onion, peppers, mushrooms and bacon inside the little brinjal pocket.
8Add the mascarpone cheese and place slices of cheese on top.
