Stuffed Baby Brinjals

Stuffed Baby Brinjals. A great side dish with any main meal. Very tasty and delicious.

  • Yields: 2-4 Servings


5 baby brinjals

1 T of olive oil

1 tsp of seasalt

3 rashers of bacon

1/4 cup of green pepper

1/4 cup of red onion

1/4 cup of mushrooms

5 tsp of mascarpone cheese

50g of cheddar cheese

salt and pepper to taste


1Preheat oven to 180°C.

2Cut the brinjal length-wise.

3Place the brinjals on a baking sheet and drizzle with olive oil and sprinkle with salt.

4Roast in the oven for about 15 Minutes - 20 Minutes until soft but tender.

5Cut the onions, peppers, mushrooms and bacon into small pieces.

6Add to a frying pan and fry until ingredients are golden brown.

7Add the onion, peppers, mushrooms and bacon inside the little brinjal pocket.

8Add the mascarpone cheese and place slices of cheese on top.

9Add back to the oven and bake for about 5 Minutes - 10 Minutes until cheese has melted.
