1Preheat oven to 180°C.
1Heat a frying pan to medium to high heat.
2Add the olive oil, onions and peppers and fry until golden brown.
3Add the mince, mushrooms, spices and tomato paste and cook the mince until cooked through.
1Heat a sauce pan to medium to high heat.
2Add the feta cheese and mascarpone and simmer until a smooth and creamy sauce.
1Cut the large courgettes into halves (length-wise).
2Take a vegetable peeler and peel length-wise so that you have strips of courgette.
1Use a baking dish and start with the mince mixture as the first layer.
2Add the slices of courgette on top, make sure you cover the entire surface.
3Add the white sauce and cover the courgettes.
4Repeat the layers above.
5Sprinkle with cheddar cheese.
6Bake in the oven for 30 Minutes until courgette is soft and cooked through.
