Mini Eggplant Pizza

Mini Eggplant Pizza. Works best as a snack at parties or before dinner.
- Prep: 10 mins
- Cook: 25 mins
- Yields: 20 mini pizzas
1Preheat oven to 180°C.
2Cut the eggplant lengthwise into four pieces (not too thin).
3Place on a baking sheet and sprinkle with salt, 1/4 tsp of garlic (each slice) and drizzle with olive oil.
4Bake in the oven for 15 Minutes.
5Remove from oven.
6Slice romanita tomatoes into quarters.
7Add 2 quarters to each slice of the eggplant.
8Sprinkle with grated mozzarella and origanum.
9Place back in the oven for 7 Minutes so that tomato is cooked and cheese melted.
10Remove from oven and enjoy!
